Deer Sausage

Postby waderjon » Mon Oct 20, 2008 9:39 pm

I quit hunting a few years ago..I figured out I no longer have the patience
to sit in a tree and keep my mouth shut for hours freezing my rear end off...
Anyway I took up the hobby of making sausage a few years back and deer sausage is one of my favorites..I have not had any meat to make any in a while but have all the equipment, seasonings and casings to make it...I believ I have some cajun,Smoked and Bratwurst seasoning right now.

If any of you hunters out there are interested in some good smoked deer sausage I would gladly make a trade...
I need 20 lbs of fresh meat to make 25 lbs of sausage...
I will supply the labor, seasonings, casings, pork fat and stuff it and smoke it in trade for a portion of the end product..

If anyone is interested send me a PM....

P.S...No old stuff out of the freezer please...Its only good if fresh

Man if I can see one I'll take you up on it. That stuff is good. A friend of mine in SC used to make it.

Jon....I've got 25 lbs of fresh dilla meat!! Will that do? I caught Dilla's second cousin Saturday night and I betcha it
would be better than deer meat!! Rather B. Fishing loves it BBQ'ed but I bet he would go crazy with some dilla sausage
for breakfast with some scrambled eggs, grits and some hot buttered biscuits!

Jay
Hook me up with a fresh deer...I have everything else except the pork fat which we can get from our local market for next to nothing.
Seriously
